Blueberry Waffles

- 2 cups all-purpose flour
- 1 tsp kosher salt
- 4 tsp baking powder
- 1 Tbsp white sugar
- 1½ cups milk Dairy Free: almond milk
- 3 eggs, separated
- 6 Tbsp butter, melted Dairy Free option: sub Coconut oil
- 1 tsp vanilla extract
- ½ tsp almond extract
- 10 oz blueberries
Preheat the waffle iron. Stir together the flour, salt, baking powder, and sugar. Beat egg whites until they form stiff peaks, set aside. Beat egg yolks on high speed until thick and lemon color about 5 minutes.
Add the milk or almond milk and stir to combine. Add the melted butter or coconut oil, vanilla, and almond extract. Stir to combine.
Stir in the blueberries and pour onto the hot waffle iron. I like to cook mine golden brown. Serve with fresh fruit, whipped cream (whipped coconut cream), syrup or powdered sugar, Enjoy!
