These cookies are so good pretty addicting. The Hint of coconut is amazing! You will have a hard time just eating one. You can make them completely dairy free by using dairy free chocolate chips or use whatever kind of chocolate you wish!

Ingredients
¾cupbrown sugaror 1 cup
¾cupgranulated sugaror 1 cup
1cupextra-virgin coconut oilsoftened slightly but not melted
3 large eggs
1tspvanilla
2½cups white whole wheat flour or all purpose flour(11.5 ounces)
1¼tspbaking soda
1tspsalt
2 cupsold-fashioned oats
12ouncessemi-sweet chocolate chips(I'll use either dairy free and regular depending on who is eating them)

craisins (great dairy free option)
chopped Walnuts
Instructions
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper, tin foil or a silicone baking mat.
In a large bowl, cream together the brown sugar, granulated sugar and coconut oil until light in color, 1-2 minutes. Add the eggs and vanilla and beat the mixture for 2-3 minutes. Stir in the flour, baking soda, salt, and oats until just combined.
Stir in the chocolate chips until combined. Scoop about a heaping tablespoon of dough. (you can roll it or just plop is on). Place them 1-2 inches apart on the prepared baking sheet.
Bake for 9-10 minutes until the edges are lightly golden and set but the middles are still soft. Remove from oven and let the cookies sit for 2-3 minutes on the baking sheets. Then use a spatula to move the cookies to a cooling rack to cool completely.
Notes
*If you don’t need the cookies to be dairy-free, you can use whatever type of chocolate chips you desire.
